We suggest preparing in proportion 1 to 16 (1 g coffee – 16 g water). For example, use 33 grams of coffee to 500 milliliters of water for 6 cups. The time of preparation should be around 4:00 minutes.
► Bring the water to boil to 92 - 98°C (197.6 - 208.4°F). Switch off the kettle without the thermometer when the first bubbles appear. Insert the triple paper filter at the filter spout, leaving a single filter on the other side. Rinse the paper filter with hot water and then pour the water out, thus getting rid of the paper aftertaste and heating the coffee pot to maintain a steady temperature.
► Grind the coffee with medium-coarse coarseness (smaller grinding – the coffee will run slower, bigger grinding – faster). Put the ground coffee in a Chemex, smooth the surface of the coffee, and place everything on the scales.
► Pour the coffee with little water, just so that everything is evenly wetted (~30 g), and leave it for 30 seconds.
► Pour the coffee over ~100 grams of water several times, preventing the coffee from drying out. Filtered coffee of 500 grams should run into the lower container in about 4:00 minutes. Pour the water in the middle in a small circle (do not pour on the edges). When filtering the coffee, turn the vessel in circles, that coffee extraction would be more even. If you choose a fabric or a metal filter instead of a paper filter, the coffee should be ground finer.
